Pudina rice with tomato perugupachadi/raita
This is surely a treat for mint lovers. Plain rice cooked with subtle favors and yeah lots of pudina and coriander with tomato raita….I am all hungry again . There are several versions to this. You can add all cloves, jeera, coconut , masalas. I preferred it plain where pudina’s flavor dominates rest all. Tomato perugupachadi/tomato raita’s recipe you can find it here. Here is the recipe
INGREDIENTS :-
Pudina/Mint leaves :- 5 bunches (pluck the leaves and wash well)
Coriander :- small bunch
Green chillies :- 3-4 (adjust)
Ginger-garlic paste :- 2 teaspoons
Olive oil :- 3 teaspoons
Salt :- as required
Rice :- 5 cups (Washed well)
METHOD :-
- Take a pressure pan, add oil allow it to heat.
- Add ginger garlic paste and fry until rawness is gone.
- Meanwhile grind together pudina, coriander and green chillies into smooth paste.
- Add rice to the pan , add 4 cups of water and add pudina paste.
- Add salt and mix well.
- Pressure cook for 3 whistles .
