Paneer Pudina Rice
This one is NOT a variant of pudina rice . Made this yesterday and got a “woww” from hubby dear and also from a sweet friend of mine . For this one basically pound pudina leaves into half-paste ,half -leafy texture . Do not grind them. I mean to say we should be able to distinguish the leaves of pudina after the rice is cooked . The spices give this dish a unique flavor. The combination of pudina and paneer though new ,came out awesome Here is the recipe
INGREDIENTS :-
Paneer cubes :- I actually used paneer made at home (a cup)
Pudina leaves :- leaves separated from a bunch washed well
Garlic :- crushed 3-4 cloves
Olive oil :- 2-3 teaspoons
Garam masala :- literally a pinch (this should not dominate the delicate flavors of the other ingredients)
Turmeric :- a pinch
Salt :- as required
Green chillies :- 3-4 (adjust)
Kothimeera/Coriander :- a bunch
Rice 3 cups washed well.
METHOD :-
- In a pressure pan, heat oil add crushed garlic cloves and allow them to fry.
- Add paneer pieces and fry them until slight brown.
- Meanwhile take a stone grinder and pound pudina leaves . Need not make them a paste. The leaves as I said should be visible.
- Make a paste of green chillies and coriander and add them to paneer pieces. Add pound pudina leaves to the paneer.
- Add washed rice and 4-5 cups of water.
- Add turmeric,salt,garam masala and mix well.
- Pressure cook it for 3 whistles and its done !!!
