Khubani Khajur ka meetha
I literally waited a lot to cook this recipe. Didnt get a chance to make it. Finally made it when my friend came home for lunch . This i made it without adding sugar. YES it did taste good and its very healthy too . It came out as sweet as my friend . This is very easy recipe and you won’t disappoint anyone. I used lots of dates in the recipe (about little more than 150gms i guess) . You can sugar too. But I just wanted to try it without sugar. It came out reasonably well . Here is the recipe
INGREDIENTS :-
Khubani(dried apricots) :- 100 gms
Dates :- 100-150 gms (adjust this according to the sweetness you prefer)
Ghee :- about 3-4 teaspoons (Adjust)
Badam /Cashew :-according to you wish and will
METHOD :-
- Soak khubani and dates together in water iovernight. If you’ve forgotten to soak(As I did ) don’t worry soak them in warm water 5 hours before making the recipe.
- Take the soaked khubani and kharjur and remove the seeds out of them.
- Keep aside khubani seeds and break them open by beating them with a stone probably and you find tiny almond like seeds . They taste and smell similar to almonds. Keep them aside we will use them in the recipe.
- Now in a pan add soaked khubani and kharjur add the water in which they were soaked into it ,close the lid and bring them to boil.
- Add the khubani seeds which look like almond seeds and mash the khubani kharjur mixture until smooth using a ladle and simmer it till it attains desired consistency
- Add ghee at the end
