Semiya Halwa
Today is Ugadi , Beginning of a year according to Andhra calendar . I had to make a sweet dish as part of today’s menu. But being festival I didn’t want to slog in kitchen for long . yet wanted to make mouth watering delicacies. So chose this sweet since it gets prepared in a jiffy . Its soooo simple that you can’t go wrong with this . For this I didn’t use food color as I was feeding my 2 year old son with this. Instead I used turmeric as food color. You can totally avoid any food color too. Here is the recipe
INGREDIENTS :-
Semiya/Bambino vermicelli:- not roasted version(2 cups)
Semiya/Bambino vermicelli:- not roasted version(2 cups)
Ghee :- 1 tablespoon
Elaichi, cardamom :- 1 teaspoon each
Cashews :- 3-4
Badam :- soaked in warm water and peel the skin and cut into flakes
Sugar :- 2-3 tablespoon (adjust)
Turmeric :- orange red,a pinch
Milk :- 1 1/2 cup(you can substitute with khoya)
Water :- a cup
METHOD :-
- Melt ghee in a deep frying pan and add cashews, elaichi and cardamom to it.
- Fry until cashews are slightly brown.
- Now add vermicelli to it and fry until golden brown.
- Add milk and bit of water and turmeric and close the lid .
- Cover it for 5 min until vermicelli gets cooked.
- Add little more milk, sugar and mix well till it melts , close the lid again and simmer for 4 minutes.
- Add badam flakes and serve hot
