Capsicums stuffed with soya

There must be ‘n’ number of variations to this recipe :-) From aalo to brown rice our lovely capsicums can accommodate anything and everything in them. :-) . So this protein rich , less fat recipe comes with nice aroma and taste and is very very simple to make :-) . I actually made this using microwave except the part that I boiled granules on stove . Here is the recipe

INGREDIENTS
Capsicums :- 3-4 small ones.
Soya granules/nuggets :- a cup
Tomatoes :- 3-4 pulpy ones.
Garlic pods :- 3-4
Italian seasoning :- a teaspoon
Olive oil :- 2 teaspoons
Coriander :- to sprinkle
Salt :- as required
Chilli powder :- a teaspoon(adjust)
METHOD :-
  1. Heat olive oil in a pan and add garlic pods and fry them until brown.
  2. Add chopped tomatoes and soya granules, add salt and allow granules and tomatoes to cook together.
  3. Simmer till tomato pulp evaporates.
  4. Add chilli powder ,Italian seasoning and mix well, allow it to cool.
  5. Now grind soya-tomato into coarse paste.
  6. Cut away capsicum heads and scoop out the seeds. Fill it with soya-tomato mixture .
  7. Apply oil to the capsicums and in the same pan simmer till capsicums are cooked on all sides.
Using microwave :-
  1. Microwave tomatoes at 80% power for 8 minutes.
  2. Peel off the skin and keep aside the pulp.
  3. Take little oil and add garlic pods and microwave at 80% for 4 minutes.
  4. Now take tomatoes , boiled soya, garlic pods with oil , Italian seasoning, salt, chilli powder microwave them together for 4-5 minutes at 80%.
  5. Allow it to cool and grind them into coarse paste.
  6. Now cut the head of capsicums and scoop out the seeds part and stuff it with soya-tomato mixture.
  7. Apply olive oil to capsicums and microwave them for 5 minutes by turning sides at 80%.
