Aalo Fry..with Italian seasoning
This one is partly inspired from my best friends cauliflower curry . He added basil, thyme and oregano in it. . It was right blend of Indian and Italian kind of taste and aroma. So I tried something similar with aalo and it came out finger licking good. In course of time I learnt right way to fry aalo without making it gooey and without using much oil. The right trick lies in heating pan and pan +oil enough, Cutting medium sized pieces and closing the lid while frying and using low flame to fry. Here is the recipe
INGREDIENTS :-
Aalo :- 1/2 kilo(cut into medium sized pieces)
Salt :- as required
Oil :- 3/4 of a ladle
Italian seasoning :- I used keya seasoning. (as required)
Coriander /Dhania :- 1/2 bunch
METHOD :-
- Heat the pan without adding oil first. Heat it for atleast 7-8 minutes.
- Add all the oil and heat again all in low flame for 8 more minutes.
- Now add aalo pieces into it and add salt and close the lid.
- Leave it that way for 8-10 minutes.
- Open the lid stir pieces again and close the lid.
- When you feel the curry is fried well add seasoning or chilly powder and coriander.
