Bendakaya -Tomato pulusu/Ladies finger-Tomato stew

Bendakaya as a veggie gives an awesome taste when eaten fried with rotis :-) But hang on !! That’s not the only way to cook it :-) This stew tastes just awesome. Tangy tamarindy spicy are its attributes . Goes well with rice but yeah we ate with phulkas and still it was awesome.

INGREDIENTS :-
Ladies finger :- 1/2 kilo chopped
Tomatoes :- 3-4 ripen
Onions :- 1 chopped
Ginger-garlic paste :- 1 teaspoon (made fresh)
Sambar powder :- 1 teaspoon
Garam masala :- a teaspoon
Chilli powder :-1 teaspoon
Salt :- as required
Oil :- 1 tablespoon
Tamarind :- a small lemon sized ball
Coriander :- a bunch
For Tempering/seasoning :-
Urad Dal :- 3 teaspoon
chana dal:- 3 teaspoon
jeera :- 3 teaspoon
aavalu/mustard seeds :- 2 teaspoon
Dry Chillies :- 1-2
Curry leaves :- 2-3
Hing :- a pinch
METHOD :-
  1. Heat oil in a pan add oil and heat all the tempering adding them one by one.
  2. Add bhindi and increase the flame to medium not high not low.
  3. Add salt and mix well, and cooked with closed lid.
  4. In separate pan heat little oil add onions and half of chopped tomatoes and cook them until onions are transparent. Then grind it into nice paste.
  5. When bhindi is half cooked (you can see that by seeing steam over bhindi) and add remaining chopped tomatoes , squeezed tamarind and allow them to cook.
  6. Add tomato-onion mixture to bhindis , add garam masala, sambar powder and chilli powder and mix well
  7. Add coriander and simmer it for few minutes
  8. Have it with rice/roti :D
