Spicy beans-peanuts curry
This one is for spice lovers . Again made with very less oil and yeah with more concentration on spices ! For this I used mamidi allam (mango-ginger) again. I just love its flavor!!. You can use normal ginger too. Peanuts add extra crunchiness to the recipe. Here it is
INGREDIENTS :-
Beans :- 1/2 kilo chopped
Mango-ginger :- small piece
Garlic :- 4-5 pods
Green chillies :- 4-5(Adjust)
Coriander :- a bunch
Curry leaves :- crushed, 4-5
Peanuts :- a cup(roasted and skin removed)
Salt :- as required
Oil :- 2-3 teaspoons
Turmeric :- a pinch
For tempering :-
Jeera :- 1 teaspoon
Mustard :- a teaspoon
Urad dal :- a teaspoon
Chana dal :- a teaspoon
METHOD :-
- Take oil in a pan heat it well.
- Add all the tempering and allow it to sizzle. Add curry leaves.
- Grind together ginger-garlic-coriander-chillies into nice paste.
- Add this paste into pan and fry it for a min or so.
- Add beans , salt, turmeric and cook with closed lid till beans are well cooked.
- Meanwhile crush peanuts into coarse powder and sprinkle on beans and mix well.
- Dress with coriander and its ready
