Pasta with peanut sauce
I wanted to try out something new today. Something which does not have cheese in it yet it should be a delicious pasta . So got this idea of making peanut sauce. Generally while making something exotic if possible avoid use of all varieties of sauce be it tomato, soy, vinegar especially if you are a foodie and crave for exotic food all the time like me . Basically what I mean to say is avoid ingredients which have lots of preservatives in them, Stick to fresh herbs and spices . I learnt this from fellow wonderful food bloggers. So in this entiiire recipe , I avoided use of anyyyyy ready-made sauce. Even the peanut paste , I made it at home. This required no cheese. Yet at the end it was cheesy and yum due to peanut sauce. Here is the recipe.
INGREDIENTS :-
Baby corn :- chopped longitudinally 1/2 cup
Yellow bell pepper :- 1/2 cup
Tomato :- chopped 1/2 cup
Broccoli :-1/2 cup
You can add any veggie.
Pepper :- 1 teaspoon
Basil :- 4-5 leaves
Thyme, oregano :- a teaspoon
Peanuts :- a cup
Whole wheat pasta :- 1 cups
Garlic :- 3-4 pods chopped
Olive oil :- 2 teaspoons
Salt :- to taste
METHOD :-
- Bring water to boil and add pasta cook until its entiirely boiled.
- In a pan heat olive oil and add chopped garlic.
- Add all the chopped veggies and close the lid
- In a separate pan dry roast peanut and allow them to cool down.
- Remove the outer layer by crumbling peanuts with hand and grind into smooth powder.
- Add a bit of water and make it into smooth paste.
- Add boiled pasta to cooked vegetables in the pan.
- Add salt , chopped basil, powdered white pepper , herbs and peanut paste and allow it to simmer for 5 minutes.
- Dress it with coriander and olives
