Pasta with coconut milk and broccoli

This is the most amazing pasta I’ve ever eaten. Frankly I was bored of regular white sauce and tomato pasta. This time wanted to try something new and saw this in one of blog sites :-) . Made my bit of variation to it and it came out damn good. It is very easy to make too. The subtle flavor of coconut milk in fact dominates everything else in the dish. I avoided adding tomatoes as I didn’t want to alter the taste much !!

INGREDIENTS :
Coconut :-1. a remove coconut from shell, cut into pieces, add water grind it in a grinder to get thick milk. Filter the coconut and collect the milk.
Garlic cloves:4
Broccoli :- 1/2 cup
Yellow capsicum :-1/2 cup
Zucchini :- 1/2 cup
Pepper :- a teaspoon
Italian seasoning :- a teaspoon
Whole wheat pasta :- 2 cups
Olive oil :- 2-3 teaspoons
Cheese :- 2 teaspoons
Salt :- as required
Kothimeera/Coriander :- 1 bunch
METHOD :-
  1. Boil water and when it is boiling add pasta and allow it to boil. When it is boiled immediately remove it from stove and drain hot water wash pasta  in running cold water.
  2. Extract coconut milk as described above and keep aside.
  3. In a pan add olive oil and chopped garlic and allow it to sizzle.
  4. Add broccoli, zucchini, yellow capsicum and saute them until soft.
  5. Add coconut milk, salt, Italian seasoning, pepper and mix well
  6. Stir it until it starts boiling and add pasta.
  7. Add cheese and simmer it for few minutes.
  8. Dress it with coriander, olives
