Mukkala Pulusu

This one is full of veggies (what ever you like) and is full of all nutrients. Does not have heavy calories. Its almost made thrice a week at my place , its also easy to make.

Veggies :- (anyything…I used bottle gourd, sweet potato, drumstick, carrot, onion, tomato . You can add brinjal, potato etc)
Tamarind :- a lemon sized ball
Rice Flour :- a teaspoon (for thickening)
Jaggery :- a small piece(Adjust. Jaggery is better than Sugar)
For powder :-
Urad Dal :- 1 teaspoon
chana dal:- 1 teaspoon
jeera :- 1 teaspoon
Methi seeds / Fenugreek seeds :- a teaspoon
Coriander Seeds ;- a teaspoon
Red chillies :- 2- (Adjust)
Dry roast all of them and make a powder.
For Tempering/seasoning :-
Urad Dal :- 1 teaspoon
chana dal:- 1 teaspoon
jeera :- 1 teaspoon
aavalu/mustard seeds :- 1 teaspoon
Dry Chillies :- 2-3
Curry leaves :- 2-3
Hing :- a pinch
Curry leaves for tadka :- 4-5 leaves
Oil:- 1 tablespoon
I added seeds of dry chillies separately. Apparently in one of the telugu TV cooking programs an elderly lady said that seeds of dry chillies can be stored separately and they add extra zing to the tempering. They won’ be spicy :) . This recipe I made in simpler way. The normal way would be boiling all veggies in water first add the powder tamarind extract and rice flour paste and then add tempering. In understand time limitations for working women …so this is what I did
METHOD :-
  1. In pressure cooker take all veggies, pour some water add powder add tamarind piece (no need to extract juice. If the tamarind is not seedless add without seed ), jaggery, add rice flour and pressure cook it for 3-4 whistles.
  2. Remove the container and adjust powder and rice flour if necessary. Mix well . If its more watery add rice flour without any lumps and add salt.
  3. Now take tadka add all the seasoning add red chilly seeds at the end and allow them to sizzle.
  4. Add this to the veggie stew.
  5. Add kothimeera/Coriander and simmer for 5-6 minutes.
