Carrot uuragaya

Its best bet with chapathis. Carrots soaked in salted lemon juice and other spices taste awesome. Some add vinegar to it. But trust me lemon is awesome.Here is the recipe.
INGREDIENTS :-
Carrots :-chopped finely (1/4 th kilo)
Lemons :- 4-5 big (use juicy ones)
Mustard seeds :- 5 teaspoons
Fenugreek/Methi seeds :- 5 teaspoons
Jeera:- 2 teaspoons
Oil :- 1 tablespoon
Salt:- 2-3 teaspoons (Adjust)
Chilli powder :- 4 spoons(adjust)
Turmeric :- a pinch
garlic :- 3-4 pods
METHOD :-
  1. Take a mixing  bowl, add carrots,add salt. Squeeze lemon juice and keep aside.
  2. Dry roast mustard,fenugreek,jeera individually and grind them into coarse powder.
  3. Add this to carrot pieces. Add chilli powder,oil and mix well.
  4. Take a bit of oil roast garlic pods in it add it to the carrot pieces
  5. Keep this in clean jar and leave it overnight with lid closed.
  6. Next day adjust  any ingredient if required.
  7. For this recipe make sure your hands,any surface containers jars used are not wet.
