Spinach pasta
I couldn’t be more happier. This came out aweeesome !! Two reasons for my happiness. 1) I made pasta from scratch using normal chapathi flour, yess !! egg-less. 2) Pasta was just just just awesome…loved spinach and cream pasta..I promise I never wont use pasta from market again(the maida one ) . Here is the recipe. This recipe I got it from vicky ratnani’s (NDTV good times ) recipes.
INGREDIENTS :-
Pasta :-
Wheat flour :- 2 cups
Water :- enough to make chapati dough.
Oil :- to brush the flour, i guess just apply to your palms that’s it
Make a nice chapathi dough, brush your hands with oil and apply to chapathi dough well and keep it in fridge for 3-4 hours.
Sauce :-
Amul cream/Milk cream :- small packet(1)
Milk :- small cup around(1-2 tablespoons)
Spinach :- a bunch
Salt :- as required
Butter :- 1 teaspoon
Garlic pods :- 4-5 (chopped finely)
Lettuce :- 2-3 leaves
Onions :- 1 big chopped
Pepper corns :- 6-7 ( made into coarse powder)
Red chillies :- 3-4 (Adjust)
Olive oil :- 1 tablespoon
Capsicum (red and yellow, you can use green too ):- all total 1 cup
Broccoli :- 2 big florets chopped
Cheese :- 2 teaspoons or 1 wedge or 1 slice
METHOD :-
- Roll out chapati dough using a pin into flat big chapathi. Make it not too thin, not too thick . Medium level thickness is fine. Dust it well with flour so that it doesn’t stick to the surface.
- Cut into fine ribbons.
- Mean while heat a pan with sufficient water and bring it to boil.
- Carefully place the ribbons into water and allow it to boil well.
- Now drain out water and add a dash of olive oil to the boiled wheat ribbons aka our pasta and keep aside
- Take another pan with water and blanch spinach in it.
- In a frying pan add 1/2 olive oil, add onions and lettuce and saute it for a while.
- Add chopped garlic and red chillies and blanch it for 3-4 minutes.
- Now grind together blanched spinach, onion-lettuce-garlic-red chillies and pepper corns into smooth paste, keep aside.
- In the frying pan add remaining olive oil, add all veggies , capsicums , broccoli and saute them for 4-5 minutes.
- Add amul cream 1 tablespoon , cheese, and milk to the pan and mix well.
- Add salt and ground spinach-onions mixture. Mix very well. Add butter.
- Bring this mixture to boil.
- Now add boiled pasta and mix well until its well coated.
- Garnish it with pepper corns, olives, pasta seasoning.
